Professor Robert H. Lustig is a neuroendocrinologist at the University of California in San Francisco. He became internationally known for his research on the relationship between obesity and sugar, in particular fructose (fructose), which has been mass-used in the industrially produced form as high fructose corn syrup since about 1980.

Fructose sends wrong signal

In his lecture, "Sugar: The Bitter Truth," he tells how sugar consumption in the Western world has nearly quintupled since the beginning of the century - and what the consequences of excessive consumption of high fructose corn syrup (High fructose corn syrup). Fructose inhibits the hormone leptin (responsible for satiety) as well as the release of insulin. So the brain does not realize that sugar has been consumed, so it can not pass on the command "I am full" to the body.

Unlike glucose, fructose is not utilized by the body to a large extent (80 percent), but is metabolized directly in the liver. The doctor compares the intake of fructose with the drinking of alcohol, only without the intoxication, and ascribes here the same harmful effects.
