Climate-friendly recipes for every season:
Today's diet is more damaging to the climate than traffic. Because there are too many meat and milk products on the plates, the production of which is responsible for the majority of the nutritional greenhouse gas emissions. In order to curb climate change, the consumption of animal products must be reduced. The just launched "Recipes for the Climate" by Greenpeace Switzerland and tibits show just how varied and tasty the plant nutrition is. Four to five additional cooking ideas are published each season. Vegan, seasonal and with environmentally friendly resource consumption.

PUMPKIN IS PIE
**********************************

INGREDIENTS:
250 g of savoy cabbage
2 shallots
1 branch rosemary
1 small clove of garlic
30 ml rapeseed oil
350 g butternut squash
250 g oyster mushrooms
250 ml vegan sauce cream
25 ml soy sauce
salt and pepper
250 g puff pastry

PREPARATION:
Preheat the oven to 180 degrees.

Cut the pork into 3 × 3 cm cubes, blanch for a minute in salt water and
Drain. Peel the shallots and the garlic and chop finely and halve the rosemary sprig. Peel the pumpkin and cut into 1 cm cubes, cut the oyster mushrooms into 1 cm thin strips. Heat the rapeseed oil on a medium heat in a pan and briefly braise the shallots, garlic and rosemary. Add the pumpkin, oyster mushrooms and pork and continue to steam for about 5 minutes, stirring occasionally at medium speed. Add the sauce cream and soy sauce, bring to the boil, season with salt and pepper and cook for about 1 minute. Then put the mushroom and vegetable mixture in a gratin dish and let them cool briefly.

Carefully place the puff pastry on the mixture, draw in, brush with a little soy sauce and bake in the oven for 20–25 minutes until golden and crispy.
