Climate-friendly recipes for every season:
Today's diet harms the climate more than traffic. For there are too many meat and dairy products on the plates, whose production is responsible for the majority of dietary greenhouse gas emissions. In order to curb global warming, the consumption of animal products must be reduced. The variety of recipes for the climate of Greenpeace Switzerland and tibits shows just how varied and tasty the plant-based diet is. Four or five more cooking ideas are published per season.

GREEN MAC'N'CASHEW
**********************************
Persons: 4
Preparation time: 25 minutes

INGREDIENTS:
two onions
two gloves of garlic
1 bay leaf
1 small carrot
4 tbsp olive oil

80 g of cashew nuts, soaked overnight
200 ml water
200 ml of vegetable drink
5 g noble yeast
250 g of spinach
Salt and pepper to taste
300 g maccheroni
Edelhefe

PREPARATION:
Preheat the oven to 180 degrees. Peel the onions and cut into fine rings. Also peel off the garlic and finely chop. Peel and slice the carrot. Heat the olive oil in a pot and fry the onion rings, garlic, bay leaf and carrot. Wash the spinach thoroughly. Put the cashew nuts, water, milk, yeast and spinach in the pan, bring to a boil and simmer for about 10 minutes on a small scale. Season with salt and pepper, mix well in the mixing bowl and put back into the pan. In the meantime boil the maccheroni in the salted water until crispy, drain well, mix with the sauce and arrange in a gratin dish. Spread the yeast on the surface and gratinate in the oven for 7 minutes.
