Fairtrade Austria
In the #FAIRbruary life is fair and tasty. This warming sweet potato peanut soup is just right for the cold days.
🍲 Ingredients (*FAIRTRADE)
two onions
1 clove of garlic
2 sweet potatoes
2 carrots
500ml vegetable bouillon
400ml coconut milk*
400g tomato passata
4 teaspoons peanut butter*
1/2 tsp chili powder*
1/2 tsp paprika*
coriander, peanuts
👨🍳 Preparation
Dice the onions and sauté them in a saucepan with the garlic. Peel and dice the sweet potatoes and carrots, then add to the saucepan and pour over the vegetable stock, coconut milk and tomato passata. Cook over medium heat until sweet potatoes are done. This takes about 15 minutes. 4. Add the peanut butter and season with spices. Garnish with coriander and peanuts. A wonderfully warming dish!
