How much food do you throw away? Recipes with leftovers

Are you throwing away food?

Most would answer: “No!” However, the figures say something different: According to the Federal Ministry of Food and Agriculture “each of us throws away at least 75 kilograms of food per year”. It is estimated that more than half of it would still have been edible.

An old cauliflower, a few shriveled, pliable carrots and broccoli - classic vegetables that can be found in almost every refrigerator at this time of the year. However, the ingredients are often not very vivid and have to be recycled somehow, instead of being thrown away. For example, with these three ingredients you can easily make vegetarian vegetable nuggets!

Ingredients:

½ cauliflower

1 broccoli

2-3 carrots

bread crumbs

Olive oil

A mixer

Preparation:

  1. The carrots are peeled and chopped into rough pieces. Also the cauliflower and broccoli are cut and placed together in a blender.
  2. The mass is sprinkled with 2-3 EL breadcrumbs and stirred.
  3. The vegetables are then formed into flat nuggets and breaded again from all sides in the breadcrumbs.
  4. The nuggets are then sautéed in the pan in oil and can be served with any salad or a homemade dip!
