Anyone who thinks sweet potatoes grow only in the tropics is wrong. Even in Austria, innovative farmers are already cultivating the tubers, for example in Burgenland. Pay attention to the next purchase so on the origin. Even better: grow sweet potatoes in the garden or in the pot on the balcony and harvest in the autumn.

Recipe for yummy sweet potato curry with chicken:

Shopping list for 4 portions:

2 big sweet potato

500 g chicken breast

4 carrots

2 onion

1 big red paprika

½ can of coconut milk

1 can of peeled tomatoes

curry powder

cayenne pepper

Salt

In just XNUMX steps: 

  • Dice the onion and fry in a saucepan
  • Chop chicken breast and add to the onions, sauté, season with salt and curry powder
  • Add chopped vegetables
  • Add coconut milk and tomatoes
  • Allow at least 30 minutes to simmer
  • Season with cayenne pepper

As a side dish I recommend rice. Bon Appetit!

Tip: It pays to cook right away. The curry can be frozen and does not lose its taste while warming up?

Extra tip: Vegetarians can replace the chicken with zucchini.
