Simple recipe without meat: Bolognese lentils

Nowadays people are advised of healthy and environmentally friendly nutrition. This creates creative and delicious dishes that not only bring many benefits for people, but also for nature. Lentils are among the healthiest legumes for many reasons. For example, they are a good alternative to meat because they are very high in protein. Lentils fill you up, even without unnecessary fats and calories and even contain many vitamins and minerals. From an ecological point of view, lentils increase soil fertility and thus ensure sustainable agriculture. And best of all: you can also buy them packaging-free. Ingredients:

  • 1 onion
  • two gloves of garlic
  • 1 carrot
  • ½ celeriac
  • 1 can of chopped tomatoes
  • 1 EL tomato paste
  • 100g red lentils p
  • 150mL vegetable stock
  • Olive oil
  • Noodle of your choice
  • Italian spices (basil, oregano, rosemary)

Optional: A pinch of curry and cumin

Preparation

  1. The onion, carrots and celeriac are peeled and cut into cubes.  
  2. Heat the pan with a little oil and fry the onion in it until translucent. Add carrots, garlic and celeriac and fry with it.
  3. The tomato paste is now mixed into the seared vegetables. The chopped tomatoes are added with the vegetable stock, lentils and spices and should then simmer on a low heat for about 20 minutes with the lid closed. If necessary, some liquid can be added because the lenses draw a lot of water.
  4. Tip: This Bolognese tastes particularly delicious with a pinch of curry and cumin, which is mixed into the amount.
  5. In the meantime, the pasta can be cooked according to the directions on the packaging. As soon as the sauce is ready, it can be served with the noodles. Parsley and parmesan go well with it. Bon Appetit!
